We, however, are convinced that good coffee requires high-quality grinding to optimally extract the ingredients and deliver a premium in-cup experience – from flavour to crema – consistently over a long period. This, however, requires a different set of priorities and elevates the grinder from its shadowy existence to the status it deserves: that of one of the centrepieces of high-quality coffee preparation.
Weaknesses of traditional built-in grinders in fully automatic coffee machines for the catering industry
Actually, we’d rather focus on finding better solutions than on criticising! Nevertheless, we feel it is appropriate to highlight a few issues here.
Traditional built-in grinders are not designed for consistent quality, but primarily for cost optimisation at every level.
The service life of standard grinding discs is extremely limited, and their cutting geometry fails to achieve uniform particle size distribution over time.
The grind setting is usually imprecise or only possible in coarse stages, which at best claims to allow for a rough adjustment to different coffee varieties, roasts or humidity levels.
Added to this is a lack of modularity, which does not allow the grinder or grinding discs to be specifically tailored to particular requirements and installation situations.
Mechanical instability, play in the bearings or unbalanced components also lead to a noisy grinding process and increased wear.
In practice, this manifests as inconsistent coffee quality, more frequent cleaning and maintenance intervals, and unwanted downtime.
Consequently, service costs, operating costs and the total cost of ownership rise, whilst the machine’s – and, above all, the beverage’s – actual quality promise is not reliably fulfilled.
